Easy Vegetable Lasagna

Description

A delicious and hearty vegetarian lasagna packed with fresh vegetables and layers of cheese.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 3 cups spinach, fresh
  • 2 cups zucchini, sliced
  • 1 cup mushrooms, sliced
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. In a bowl, combine ricotta cheese, spinach, Italian seasoning, salt, and pepper.
  4. Spread a layer of marinara sauce on the bottom of a 9×13 inch baking dish.
  5. Layer 3 lasagna noodles over the sauce.
  6. Spread half of the ricotta mixture over the noodles.
  7. Add half of the zucchini and mushrooms on top, followed by a third of the mozzarella cheese.
  8. Repeat the layering process with noodles, ricotta mixture, remaining zucchini and mushrooms, and another third of mozzarella cheese.
  9. Top with the last 3 noodles, remaining marinara sauce, and finalize with the remaining mozzarella and all the Parmesan cheese.
  10. Bake in the preheated oven for 45 minutes.
  11. Let it cool for 10 minutes before slicing and serving.

Notes
