Follow the Directions below step by step. Keep the heat medium so the eggs cook evenly. Add the cheese near the end so it melts inside. Fold gently and serve with sliced tomato.

Ingredients :

2 tbsp extra virgin olive oil, 3 cloves garlic, 1/2 onion, 2 cups fresh spinach, 3 cage-free organic eggs, 1 slice havarti cheese, 1 tomato, pinch sea salt, pinch black pepper

Directions :

Finely mince 3 cloves of garlic, finely dice 1/2 of an onion, reserve 2 cups of fresh spinach and crack 3 eggs into a bowl, season with sea salt & black pepper and whisk together until well combined, Heat a nonstick fry pan with a medium heat and add in 2 tablespoons of extra virgin olive oil, after 2 minutes add in the diced onions and minced garlics, mix with the olive oil, after 3 minutes add in the 2 cups of fresh spinach and continue to mix, once the spinach has welted (about 2 minutes), season everything with a kiss of sea salt and some freshly cracked black pepper, quickly mix together and then pour in the egg mixture, after 1 minute run a spatula through the outer edges, to ensure the omelette is not sticking, after 2 minutes add in a slice of cheese and fold the omelette together, cook for 30 seconds and then flip the omelette, cook for another 30 seconds, transfer to a serving dish next to some sliced tomatoes, enjoy!
