Description

A vibrant and healthy vegan pasta dish loaded with seasonal vegetables.


Ingredients

Scale
  • 8 ounces whole wheat pasta
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 cup cherry tomatoes, halved
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for 1 minute.
  4. Stir in zucchini and bell pepper, cooking for about 5 minutes.
  5. Include cherry tomatoes and spinach, cooking until spinach wilts.
  6. Mix in the cooked pasta and Italian seasoning. Season with salt and pepper.
  7. Serve warm, garnished with fresh basil if desired.

Notes

For a gluten-free version, use gluten-free pasta. Feel free to substitute with any seasonal vegetables available.
