Description

Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 8 ounces mushrooms, sliced
  • 2 cups spinach leaves
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese, shredded
  • 1 cup parmesan cheese, grated
  • 2 cups marinara sauce
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions.
  3. Heat the olive oil in a large skillet over medium heat.
  4. Add the onion and garlic; sauté until translucent.
  5. Stir in the zucchini, bell pepper, and mushrooms; cook until softened.
  6. Add the spinach; cook until wilted.
  7. Mix the ricotta cheese with salt and pepper in a bowl.
  8. Spread some marinara sauce on the bottom of a baking dish.
  9. Layer 3 lasagna noodles, half the ricotta mixture, half the vegetable mixture, and a third of the mozzarella.
  10. Repeat the layers, ending with noodles topped with marinara and remaining mozzarella.
  11. Cover with aluminum foil and bake for 25 minutes.
  12. Uncover and bake for an additional 15 minutes or until the cheese is bubbly and golden.
