Description

A hearty and delicious vegetarian lasagna packed with layers of fresh vegetables and savory cheese.


Ingredients

Scale
  • 9 lasagna noodles
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 3 cups spinach, fresh
  • 2 cups mushrooms, sliced
  • 1 zucchini, sliced
  • 1 red bell pepper, chopped
  • 2 cups marinara sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions; drain and set aside.
  3. Grease a 9×13 inch baking dish.
  4. Spread a thin layer of marinara sauce on the bottom of the dish.
  5. Layer 3 lasagna noodles over the sauce.
  6. Combine ricotta cheese, spinach, oregano, basil, salt, and pepper; spread half of the mixture over the noodles.
  7. Layer half of the mushrooms, zucchini, and red bell pepper over the ricotta mixture.
  8. Repeat layers: noodles, ricotta mixture, vegetables.
  9. Top with remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
  10. Cover with aluminum foil and bake for 25 minutes, then uncover and bake for an additional 15 minutes.
  11. Let sit for 10 minutes before slicing and serving.
