Ingredients
- 9 lasagna noodles
- 2 cups ricotta cheese
- 3 cups spinach, fresh
- 2 cups zucchini, sliced
- 1 cup mushrooms, sliced
- 2 cups marinara sauce
- 2 cups mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to package instructions; drain and set aside.
- In a bowl, combine ricotta cheese, spinach, Italian seasoning, salt, and pepper.
- Spread a layer of marinara sauce on the bottom of a 9×13 inch baking dish.
- Layer 3 lasagna noodles over the sauce.
- Spread half of the ricotta mixture over the noodles.
- Add half of the zucchini and mushrooms on top, followed by a third of the mozzarella cheese.
